The Dark 85% Cacao bar represents the pinnacle of our farm-to-bar philosophy. Sourced exclusively from our family estate in the heart of the Napo Valley, these beans benefit from rich volcanic soil, consistent rainfall, and shade-grown cultivation under native canopy trees. After careful hand-harvesting, the beans undergo a meticulous 7-day fermentation process in traditional wooden boxes, developing deep, complex flavor precursors. We slow-roast in small batches to preserve delicate fruity notes, then conch for 72 hours to achieve an exceptionally smooth mouthfeel. The result is a chocolate experience that is bold yet refined, with zero added sugar and a naturally sweet, fruit-forward finish.
